Volume 9 of the ‘Monumenta Poloniae Culinaria’ series contains Paul Tremo’s recipes. which talk about something more than just preparing beef, soup, capon and tripe. The chef of Stanisław August presented his own proposal for the synthesis of French culinary patterns and Polish tradition. The rejection of spicy spices and taste contrasts, the liberalisation of fasting, the classic aesthetics of good taste, modern techniques of reduction, condensation and clarification, as well as the rejection of the principles of humoral dietetics are visible in both ‘French’ and ‘Polish’ recipes. The latter refer to the French fashion for dishes associated with the Lorraine court of Stanisław Leszczyński. They were quickly accepted as very Polish dishes, and the royal chef’s solutions found numerous imitators and continuators.
